BOK CHOY  Also known as Pak Choi, Bok Choy is a cabbage relative with a mild mustard flavor with background sweetness and used predominantly in Southeast Asian cuisine.  Use raw bok choy leaves in salads or on sandwiches, add to soup at the last minute or toss in a stir fry. Cut in half or use whole bok choy, drizzle with olive oil and throw it on the grill. Add just a sprinkle of salt, turn once and enjoy. Cut some bok choy in half and braise with a mixture of your favorite stock, ginger, garlic, sesame oil, soy sauce, and red pepper flakes for a side dish. Fill raw bok choy stalks with anything you would use to fill celery sticks.
