Our friends at The Pub Craft Kitchen in Cedar City use the dried petals for marigold cocktail syrup (you should try it — we keep meaning to ourselves). Like the roses planted at the ends of vineyard rows, we tuck marigolds among crops for beneficials, biodiversity, and beauty — they’re just as at home in an ornamental pot.
