For a while, Kale replaced spinach — showing up in every salad bar imaginable and in bunches sticking out of yoga folks' "Kale Yeah" totes. While it's lost some trend status, it hasn't lost any of its flavor or usefulness. Kale is perfect for soups, stews, salads, chips, and more. Go back to circa 2012, and there are probably hundreds of recipes books dedicated to Kale
These are less common varieties we grow and love, especially because they hold well and don't bolt in summer like spinach often does.
Black Magic (Lacinato) Kale
Also known as dinosaur kale, this improved Lacinato type has long, narrow, deeply textured leaves that make tall, attractive bunches. Excellent for kale chips and holds well after harvest. Dark, almost blue-green leaves with a dramatic, dragon-tongue look.
Red Russian Kale
Cold-hardy and fast growing with tender, sweet leaves that deepen in color after frost. Mild enough for fresh salads and also good sautéed or in soups. Productive over a long season and especially good in cool weather. One of the most versatile kales we grow.
