If you think you need lots of plants for zucchini bread, you probably don’t — summer squash are famously prolific. Just a few plants will keep most kitchens well supplied (and may save you from freezing extra loaves). Best used fresh and often: sautéed, grilled, roasted, baked, or stuffed. The scalloped French pattypans are especially good for little squash “bowls,” or so we’ve heard.
Star Dust
Medium to dark green fruits with fine flecking and defined ridges on large, productive plants with variegated leaves. Noted for its uniform shape and steady yield from compact stems. Best harvested at 6–9″ for tender texture. A distinctive open-pollinated zucchini with both beauty and reliability.
Ronde De NiceThis is a delicious French heirloom variety. The flesh of this round, green zucchini is very tender and fine-flavored, making it an ideal squash for stuffing. Vigorous, quick-growing plants.
Golden Zucchini
Bright yellow summer squash with smooth skin and mild, crisp flesh. Best harvested under 8″ for tender texture and flavor. Prolific bush plants produce steadily through the season. A cheerful, high-yielding zucchini that’s easy to use often.
Golden Marbre
Bright golden-orange scalloped fruits on attractive bush plants with good yields. Best harvested young for very tender, well-flavored summer squash, though mature fruits can also be used as winter squash. A distinctive pattypan type with both beauty and versatility.
